Fluffy Boiled Icing
15g meringue powder
59g cold water
192g sugar
30mL corn syrup
59g water
In a mixer, whip meringue powder and cold water for about 4 minutes.
In a saucepan, combine sugar, corn syrup, and remaining water. Bring to a boil, cool slightly.
Slowly add the syrup to the meringue mixture, whipping constantly. Whip on high for about 4 minutes, until stiff and glossy.
