Corn Salsa
24 oz corn, frozen or canned
½ cup red onion, finely chopped
1 roasted poblano pepper, finely chopped
¼ cup cilantro, finely chopped
2 jalapeños, finely chopped
1 tbsp lemon juice (~1 lemon)
1 tbsp lime juice (~1 lime)
salt
In a large bowl, add corn, red onion, jalapeño peppers, poblano pepper, cilantro, lemon juice, and lime juice. Season to taste with salt.
