120 g all purpose flour
80 g sourdough discard (optional, if not using, replace with water)
2 g salt
20 g olive oil
20 g honey
0–15 g water (only if needed)
Preheat the oven to 375°F.
Mix flour and salt into a bowl.
Add olive oil, honey, and sourdough discard or water.
Mix into a firm dough. Add more water slowly if needed.
Cover and rest 15–20 minutes.
Roll dough to ~1 mm thick. It should cover an entire half sheet.
Optional: sprinkle top with salt
Cut into crackers and prick with a fork.
Bake 10–14 minutes, rotating once, until golden.
Turn oven off and leave crackers inside 5–10 minutes with the door slightly open.
